This immunity-enhancing spinach curry boasts a creamy texture and a medley of nutritious vegetables. Infused with a blend of cumin, coriander, and Kashmiri chili powders, it is brimming with bell peppers, broccoli, mushrooms, and sweet potatoes.

Mix Veg Ingredients in Creamy Spinach Curry


  • 300 Gram Mixed Vegetables
  • 30 gram Butter
  • 1 medium Onion
  • 1 large Tomato
  • 1 inch Ginger
  • 1 tbsp Garlic paste
  • 1/2 tsp Turmeric
  • to taste Salt
  • 3-4 Green Chillies (chopped)
  • 1/2 tsp Kashmiri chili powder
  • 1/2 tsp Red chili flakes
  • 60 gms Fresh cream
  • 120 gms Spinach (chopped)
  • 1 tsp Cumin powder
  • 1/2 tsp Coriander powder
  • 1 tsp Chat masala
  • 1 tsp kasuri methi


How to make Mix Veg in Creamy Spinach Curry


Place all the vegetables in hot water and boil them. Then strain the water and set the vegetables aside.

Take 20 grams of butter in a pan and heat it, then add chopped onions, ginger, and garlic to it. Cook until onions change color, then add diced tomatoes and cook until tomatoes become soft.

Add cumin powder, coriander powder, kasuri methi, and turmeric powder to it and cook for another 2 minutes. Turn off the flame and let it cool slightly. Then grind it into a fine paste.

In this same pan, heat up the remaining butter and add the chopped green chilies. Cook for a minute, then add the blended vegetables and the stock in which the vegetables were boiled.

Let the prepared paste simmer over medium heat with thinly chopped spinach leaves added until the oil separates from the side.

Add chili powder, cumin seeds, chopped coriander, chaat masala, and fresh cream to it. Cook until the desired creamy consistency is achieved.

Add lemon juice, mix well, and remove from heat. Serve hot.
